European Lobster (Homarus gammarus). Our lobster is caught in Atlantic waters off the north west coast of Ireland, fished sustainably by small inshore fishing boats, it is recognised for its fantastic flavour and excellent texture. We hold our Lobsters in sea water trays and this allows us to have really fresh live product available on demand for our customers.
